Don’t get me wrong, I love a good green salad, but sometimes I find myself eating nothing but avocado and cucumber slices. So I decided to create a lightened-up salad using just those two ingredients and a light, flavorful vinaigrette.This is this Summer salad.

If you don’t normally like salads, this is a great place to start. No single flavor is overpowering, and the cucumber and avocado have the perfect texture. And this dressing? It’s so simple, yet tastes amazing. It’s a combination of lime juice, olive oil, and garlic, so it’s a little salty, a little tart, and wraps the veggies perfectly!
